Pizza Casserole

Much as I would like to call this Chicken Pizzaiola, I am fairly certain it would be the laughing stock of the Italian community. While it may not be authentic, this recipe is delicious, easy, and fun. This dish is gluten free and pairs well with pasta or a fresh salad. You can make it your own by using your favorite kind of sauce, as much or as little cheese as you want, and any pizza topping you can imagine. Follow the Recipe Below:

Ingredients:
1 lb chicken breast, sliced thin
Garlic Powder
Black Pepper
Oregano
Vegetable Oil
1 jar of Rao’s Arrabbiata Sauce (or any sauce you prefer)
Basil
2 Cups Mozzarella cheese
Pepperoni (or any pizza toppings you prefer)

Serve with:
Spaghetti or salad

Instructions:
Preheat Oven to 400oF
Season chicken with garlic powder, black pepper, and oregano
In a Dutch oven or heavy bottomed pan, drizzle oil and place on stove over medium heat
Add chicken in one layer and sauté until cooked through and browned on all sides
Add Arrabiata sauce to the Dutch oven, season with basil and stir well
Let cook for 5 minutes, stirring frequently
Remove from heat
Top with mozzarella
Add pepperoni (or other toppings)
Cook in oven for 15-20 minutes, until cheese is melted and gooey.
Serve on bed of spaghetti or pair with salad
